If a Västerbottensost® cheese is drier or more difficult to slice than expected, there may be several possible causes. Cheese matures at different rates, and a longer maturation period can result in a more crumbly texture. This may be what you experienced with your recent purchase and can also make the cheese more difficult to slice.

To better understand what may have happened, we have forwarded your case to our Quality Department for further investigation.

We would also like to encourage you not to discard the cheese if it feels too dry. The crumbles are excellent for cooking and baking, and the cheese can also be used to make a delicious whipped Västerbottensost® butter.
